New dietitian encourages healthy choices
 
UH Dining Services wants to help you make healthier choices, so they are proud to introduce registered dietitian Caroline Sullivan as the newest member of the team.

Sullivan comes to UH from Stephen F. Austin University, where she was the registered dietitian on staff at SFA Dining Services. She also taught for the Department of Kinesiology and Health Science as an adjunct professor.

�There is a huge demand on campus for the kind of information that will allow our guests to make informed choices about the healthy options available to them in our dining services,� said Geoff Herbert, Resident District Manager for UH Dining Services. �To facilitate that and to provide an advocate for the students who can also teach and counsel through both one-on-one and group meetings is why we brought Caroline on board.�

Sullivan already has plans to begin several new programs on campus, and more details for each of those programs are below.

Dietitian�s Pick Program
Beginning Sunday, Oct. 14, customers at both residential restaurants were able to see �Dietitian�s Picks� for both lunch and dinner featured at the cash registers. The picks also rotate on the screens at the Fresh Food Company, and will do the same at the Real Food on Campus once the screen software is updated to allow it.

The picks are based on criteria such as low fat content, low sodium, servings of vegetables and calcium content. Colored identifiers will tell customers why a certain selection was made each day.

In addition, Sullivan is working on Dietitian�s Picks for the retail venues on campus that will also be featured at the registers for those locations.

One-on-One Counseling Sessions
One of the most exciting services Sullivan will offer is free, one-on-one counseling sessions with UH students. Thirty-minute sessions will be available on a first-come, first-served basis and will be restricted to one per student to allow for maximum utilization by all students on campus.

Menu Development
Going forward, Sullivan will work with chefs at both residential dining locations to develop menus that fit a variety of nutritional needs, while still maintaining speed of service and keeping student costs low. Customers can also email her at sullivan-caroline@aramark.com if they have specific questions about eating certain items or keeping a specific diet in the dining halls.

On-the-Ground Programming
Approximately once a month, Sullivan will host a Dine with the Dietitian event at one dining location on campus, giving students a chance to interact with her and ask specific questions. Topics will vary each event, but can include gluten-free eating, vegetarian and vegan lifestyles and healthy cooking tips.
