Gluten-free station comes to The Fresh Food Company
UH Dining Services strives to make every student
feel at home in the dining locations, whether residential or
retail. One way of doing that is through great customer service
and a comfortable atmosphere, but another is by ensuring that
students with special dietary needs are able to eat with their
friends in the same locations.
Over the past few months, more and more students have been
expressing concern over gluten intolerances, so UH Dining
Services opened a gluten-free station in The Fresh Food Company
on Wednesday, Oct. 31. The station is located between the
vegetarian station and the brick oven, and has its own dedicated
cookware and storage to help avoid cross-contamination.
While we cant 100 percent guarantee the prevention of
cross-contamination at the station, we are taking a number of
steps to ensure that our food is as safe as possible, said UH
Dining Services Dietitian Caroline Sullivan.
One of those steps is having two dedicated employees who are
thoroughly trained and will be the cooks over that station every
day. Another is offering a selection of gluten-free breads that
comes pre-sealed in plastic wrappers and will remain sealed
until opened by the customer.
The gluten-free station is available for lunch Monday through
Friday, and for dinner Sunday through Thursday.
Additional options will be available at all times, including
gluten-free breads and cereal (upon request), eggs, breakfast
meats, cottage cheese, fruit, yogurt, milk and hash browns for
breakfast, and whole cuts of meat, rice and potatoes, veggies,
deli meats and cheeses and fruit for lunch or dinner.
Gluten-free options are also available in the retail dining
locations, including Bare Bowls Kitchen food truck and Tandoori
Nite in the UC Satellite, which have menus that include
gluten-free entrees. The Cougar Xpress Markets also carry a
variety of gluten-free items including Kind granola bars, Thai
Kitchen meals, trail mix, fresh fruit, salads, milk, eggs and
cheese. Einstein Bros. Bagels will also soon offer a gluten-free
bagel.

dining halls or retail dining locations, contact Caroline
