UH Dining presents on food waste management at EPA workshop
 
The Environmental Protection Agency hosted a workshop in Austin on Feb. 25 titled �Sustainable Materials Management: Bringing Everyone and Everything Together.� UH Dining Services gave a presentation at the workshop on the topic of food recovery.

Amber Arguijo, marketing manager for UH Dining Services, gave the presentation along with Rita Alison, the national senior manager for sustainability at ARAMARK. The presentation focused on how to effectively manage food waste, both in kitchens and with guests, and highlighted the University of Houston�s success in several key areas.

�The biggest UH accomplishments we highlighted were the tray-less dining initiative, which reduced dining room food waste by 55 percent, and our food management process that has helped reduce food waste in the kitchens by 45 percent,� Arguijo said.

Arguijo and Alison spoke before a group of approximately 50 government, university and corporate employees who have direct impact on reducing waste at their locations.
